Food being cooled by nonapproved method as evidenced by inadequate rate of cooling during time of inspection. At front counter; cut melon (53F - Ambient Cooling 9:35/53F 10:00). Operator stated melon cut at 6:30am, at this rate will not reach 41F within 4 hours. Advised Operator to return to 41F or discard within a total of 4 hours from time cut.
