Raw animal foods not properly separated from one another based upon minimum required cooking temperature when stored in a freezer - not all products commercially packaged. Ziplock bag containing raw frozen chicken stored on shelf directly above bags containing ice for bar inside walk-in freezer. Manager removed the raw chicken from the area during this inspection.
Vacuum breaker missing at hose bibb or on fitting/splitter added to hose bibb. Backflow prevention device missing at spigot on small shed near tiki bar.
Clams/mussels/oysters tag removed from original container prior to container being emptied. Several plates of oysters on speed rack without oyster tags. Manager stated all are from the same batch and placed the proper oyster tags with the oysters during this inspection.

Handwash sink not accessible for employee use at all times. Handwash sink in bar area blocked by placement of counter top and hard to reach due to nearby equipment and proximity to floor.

Incorrect chemical test kit provided for measuring the concentration of the sanitizer solution used in the three-compartment sink and/or dishmachine. Manager provided quaternary test strips for chlorine dish machine. Manager stated they will order the proper test strips.
Raw or undercooked oysters offered and establishment has no consumer advisory sign provided on wall, menu, placard, table tent or by any other written means. Raw animal foods must be fully cooked prior to service. No consumer advisory posted anywhere inside establishment or on menu for raw oysters served inside establishment. The manager printed and posted the consumer advisory during this inspection.
Carbon dioxide/helium tanks not adequately secured. One co2 tank not secured in exterior storage shed.
Food stored on floor. Plastic bottles of water stored on floor in exterior storage shed.
In-use tongs stored on equipment door handle between uses. Two sets of tongs stored hanging from oven door handle at cookline. An employee removed the tongs from the handle during this inspection.

Wood surface not properly sealed. Shelving throughout back of kitchen and exterior storage area not painted and/or sealed.
