In-use utensil stored in sanitizer between uses. Tongs used for chicken to mix with sauces. Informed operator that utensils should not be stored in sanitizer water. Utensils should only be stored in potable water at 135F or more, or in an empty container and then cleaned every 4 hours or in between uses as needed. Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Sliced tomatoes, spring mix, corn. Reach in cooler at left side of cook line. All temperature range 46F-51F 2.5 hours per operator. Advised operator to put items on ice or move to a different cooler for temperature recovery. Advised operator not to place any temperature control for safety foods in cooler until it maintains a temperature of 41F or below.
