Quaternary ammonium sanitizer not at proper minimum strength for manual warewashing. Do not use equipment/utensils not properly sanitized. Manager stated that there was a problem with the dispenser to put quat in sink. He drained it and refilled and the quat was within proper range. Discussed with manager need to test quat level with each refill of sink.tested 0ppm quat, reamade tested 200ppm quat.
