Observed: ham strips (46F - Cold Holding); breaded chicken (46F - Cold Holding); sausage (46F - Cold Holding). Per operator, items were placed in cooler this morning to be thawed. Items were out of temperature for approximately 2 hours. Owner placed items in another cooler to allow cooling.
