Raw sewage on ground of establishment. Septic system overflowing onto ground behind establishment. Inspector had employee place a sign on the back door instructing employees to leave it closed. Inspector reported the sewage on the ground to the Department of Environmental Protection during this inspection. Following day callback per Robert.
Commercially processed ready-to-eat, time/temperature control for safety food opened and held more than 24 hours not properly date marked after opening. Pan containing fully-cooked chicken wings in portion bags missing date mark inside reach-in cooler near pizza oven. Employee stated they were opened on Sunday and added the proper date during this inspection.
No soap provided at handwash sink. No soap at handwash sink in warewash area near back door.
Employee personal items stored in or above a food preparation area, food, clean equipment and utensils, or single-service items. Employee backpack on top of prep table above pizza boxes near back door of kitchen. Employee removed backpack from table during this inspection.

Stop Sale issued on time/temperature control for safety food due to temperature abuse. Inside of refrigerated make-table by pizza oven: shredded cheddar (50F - Cold Holding). Manager stated the shredded cheddar was placed inside the unit at 10am. Shredded cheddar is stored in a plastic pan up on top of pan containing shredded mozzarella.
