Voluntarily discarded during inspection. Prep table: shredded cheese 56F, per employee cheese placed out approximately 30 minutes prior. Returned to cold hold unit during inspection.
Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Rice 129F on expo line. Per employee rice placed on steam table approximately 3 hours prior. Employee voluntarily discarded rice during inspection and made new rice.
