Per operator, out of temperature for approximately 30 minutes. Advised operator to ice down products.
Food being cooled by nonapproved method as evidenced by inadequate rate of cooling during time of inspection. lobster bisque (108F - Cooling) at 11:36; cooling since 11:21 - 96F at 12:18 - Observed in deep container on ice bath. At current rate of cooling product will not reach 70F within 2 hours. Operator transferred to shallow pans and placed in freezer. shredded cheese (46F - Cooling) at 11:52; cooling since 9:30 - 46F at 12:22 - Observed at salad station. At current rate of cooling product will not reach 41F within 4 hours. Operator iced down product.

Operator placed soup back on stove to reheat to 165+F.
Employee touched soiled apron/clothes and then engaged in food preparation, handled clean equipment or utensils, or touched unwrapped single-service items without washing hands. Observed employee wiping hands on her pants, then picked up clean shaker tins with fingers inside shaker tin. Educated operator on proper hand washing procedures.
Quaternary ammonium sanitizer not at proper minimum strength for manual warewashing. Do not use equipment/utensils not properly sanitized. Bar Triple Sink (Quaternary 50ppm) Operator drained quaternary sanitizer and set up new quaternary sanitizer.
