Commercially processed reduced oxygen packaged fish bearing a label indicating that it is to remain frozen until time of use no longer frozen and not removed from reduced oxygen package. The manager removed the fish from the vacuumed packaging to thaw. Provided a copy of the thawing instructions to the email provided.

Observed employee with phone in his hands then put phone in pocket and proceeded to put a pan of chicken in reach in cooler on cook line. Employee then wiped his gloves off with hand towel. Coached operator on proper hand washing procedures.
