Operator reheated foods and turned up the heat lamps.

Observed in the front bar cooler and the back central cooler respectively: Milk (48F - Cold Holding); Cut fruit (52F - Cold Holding). Operator stated the milk had been there for more than a day while the fruit had been there approximately 2hrs. Operator willingly disposed of the milk and moved the fruit to a working fridge.

Operator stated it had been there for approximately 2hrs. Operator removed lid in the Ambient 39F cooler. As a repeat violation the importance of following proper protocol with this violation was reinforced with the employee. Observed on the breakfast bar: Hard boiled eggs (45F - Cold Holding); Shredded cheese (45F - Cold Holding); Salsa (45F - Cold Holding); Butter chips (46F - Cold Holding). Operator stated they had been there for approximately 1hr. Operator swapped them out for new product in the reach in cooler. Observed in the bar reach in cooler: Milk (46F - Cold Holding) Operator stated it had been there approximately 1hr. Operator placed milk in a kitchen reach in cooler and lowered the temperature of the bar cooler.

No handwashing sign provided at a hand sink used by food employees. Observed no hand wash sings at the dish wash area Dan bar area hand wash sinks. Operator put hand wash sings up.
Single-service articles improperly stored. Observed a case of single service cups stored on the floor of the drys storage area.
