Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Beef (51F - Cold Holding) second temp 47F; Poultry (51F - Cold Holding) second temp 49F Operator bought 30 minutes prior to first temperatures, and was not kept cold during transportation. All other items in same cooler are 41F or below and ambient temperature reads 38F. Discussed the importance of maintaining proper temperature during transportation.
