Observed raw chicken (55F - Hot Holding); cook rice (55F - Cold Holding); shredded cheese (55F - Cold Holding); steak (55F - Cold Holding); at the cook line. Observed chicken (51F - Cold Holding); cut cherry tomatoes (51F - Cold Holding); cheese (51F - Cold Holding) at the front counter. As per the cook the food was placed on line at 11:30. The cook put bags of ice on top of products to lower the temperature.
