Employee handled soiled equipment or utensils and then engaged in food preparation, handled clean equipment or utensils, or touched unwrapped single-service items without washing hands. Employee touched garbage can and proceeded to open bags of guacamole. Manager educated employee to wash hands and change gloves. Dishwasher touched garbage can and proceeded to touch clean dishes before changing gloves and washing hands; educated; employee washed hands;
Ready-to-eat, time/temperature control for safety food marked with a date that exceeds 7 days after opening/preparation. Date marking label system marked all foods as 8 days after opening or preparation. Educated operator on properly tracking dates for date marking. Operator started reprinting the correct date marking during inspection.

Time/temperature control for safety food thawed in an improper manner. Approximately 50 cases of raw steak and 12 cases of raw chicken breast thawing at room temperature at food prep area. Advised operator to use approved thawing methods.

Heat strip failed to turn black to indicate the sanitization temperature of 160 degrees Fahrenheit was achieved on the dish surface and/or high temperature holding thermometer did not reach 160F. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired. Thermo tape failed to turn black tried three times. Advised to discontinue dish machine and use three compartment sink to sanitize.

Temperature 77 at 2:56 second temperature 73 at 3:32 pm, chicken stock 153 at 2:48 second temperature 140 at 3:31, at this rate of cooling it will not reach 135 to 70f within 2 hours. Explained. diced tomato onion mix Ambient cooling tightly covered 55 at 2:42 second temperature 53 at 3:29 prepared at 11:45 at this rate it will not cool to 41 f within 4 hours.
