Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed pancake batter (59F - Cold Holding) at room temperature. Observed poblano hollandaise (45F - Cold Holding) at reach in cooler next to fryers. As per cook, product placed in unit 3 hours prior. Cook placed item inside walk in cooler to rapidly chill.

Observed hash browns (45F - Cooling) at walk in cooler. As per manager, product was prepared in the previous day. Discussed proper cooling procedures with manager and provided cooling hand out.

Observed dishwasher machine at 0 ppm. Operator adjusted sanitizer chlorine container to allow sanitizer to flow to machine. Final concentration at 50 ppm.
Employee has not received adequate training related to their assigned duties as evidenced by the inability to answer basic food safety questions. Observed line cook without knowledge of minimum cooking temperature of eggs. She stated minimum cooking temperature of scrambled fresh shell eggs is 141F. Coached employee and manager on minimum cooking temperatures.
Food-contact surface soiled with food debris, mold-like substance or slime. Observed mold like substance on upper plate of soda dispensing machine. Operator cleaned and sanitized area.
