Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. At the front wait station bar, cut melon (42-48F - Cold Holding). The item has been on the bar for less than 1 hour. The volume of the product was reduced to 1/3 to remove out of temp portion. Out of temp portion was placed in cooler to chill and cold hold.
Raw fruits/vegetables not washed prior to preparation. On the cook line flip top cooler, avocado cut with stickers still attached. The avocado were removed and washed appropriately
