Commercially processed reduced oxygen packaged fish bearing a label indicating that it is to remain frozen until time of use no longer frozen and not removed from reduced oxygen package. Observed 3 commercially processed reduced oxygen packaged tuna inside of walk in cooler. Operator removed tuna from original packaging.
In-use utensil stored in standing water less than 135 degrees Fahrenheit. Observed utensils in standing water in kitchen at 78 F. Operator placed items on grill to heat up.
Interior of oven/microwave has accumulation of black substance/grease/food debris. Observed interior of microwave soiled with old food debris. Employee cleaned microwave.
Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Observed fan guards in both walk in coolers soiled. Employee removed fan guards to clean.
Wall soiled with accumulated grease, food debris, and/or dust. Observed wall behind cook line soiled with old food debris.
