Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed : buttered chicken stored on the cook line, 113°. This had previously been cooked. It was moved uncovered to the walk-in cooler and decreased in temperature to 106° in 9 minutes.
Handwash sink used for purposes other than handwashing. Observed : in the cook line hand wash sink, two supports bars. These were removed.
Ready-to-eat, time/temperature control for safety food prepared onsite and held more than 24 hours not properly date marked. Observed : crushed garlic(done on site) lacking a date mark. Yesterday's date was added.
Clean glasses, cups, bowls, plates, pots and pans not stored inverted or in a protected manner. Observed : at the beginning of the buffet, plates and bowls were service side up. These were inverted.
Employee personal items stored in or above a food preparation area, food, clean equipment and utensils, or single-service items. Observed : the storage room has a coat rack, with jackets on it, over bulk oil.
Food stored on floor. Observed a case and a bucket of food stored on the floor of the walk-in freezer.
In-use utensil stored in standing water less than 135 degrees Fahrenheit. Observed : cook line utensils stored in 74° water on the table, and 94° on the stove. Both were drained of water.
In-use wet wiping cloth/towel used under cutting board. Observed : on the far end of the cook line, a cutting board with a wet cloth under it. The cloth was removed.
Open dumpster lid. Observed the dumpster lid was open.

Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Observed 0 Ppm for chlorine. The new jug was in place. It was then properly primed and reached 100 ppm.
Buildup of food debris/soil residue on equipment door handles. Observed: multiple door handles on the cook line have build up.
Food stored on floor. Observed cases of food on the floor of the walk-in freezer.
In-use knife/knives stored in cracks between pieces of equipment. Observed on the cook line a French knife stored between the tables. This was cleaned and then placed on a clean cutting board.
Soiled cloths, linen, aprons, coats, or other uniform apparel not kept in a suitable container prior to laundering. Observed: a used apron on the prep table in the kitchen. This was moved to the laundry bag.

Food stored on floor. Observed: a case of food on the floor in the walk-in freezer. Delivery was yesterday.
Reach-in cooler shelves/kitchen shelves with rust that has pitted the surface. Observed: the lower shelves on the prep tables have rust.

Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Observed the top of the dish wash machine is soiled. Kitchen staff then cleaned the top of the dish wash machine.
Single-service articles improperly stored. Observed: cases of to go items on the floor in dry storage. These were moved to an alternative location.
Stored food not covered. Observed sauces frozen in the walk-in freezer, not covered. Lids were added.
A return visit. The problems from the previous inspection had been dealt with.

Food-contact surfaces not sanitized after cleaning, before use. Do not use equipment/utensils not properly sanitized. Observed: as silverware was being rolled, the food contact surface was being touched. Those pieces were moved to dish and staff was retrained on safe rolling of silverware.
Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed: in the walk-in cooler, chicken 51, 51, 50. Lids were removed, temperatures dropped 3-4F in 17 minutes to 47,48,47. Some items were cooked and cooling, or prepped and cooling. Specific times were not given for processes from today. ÿA technician has been called to verify there is nothing that needs attention. Bulk cooked food could be placed in the freezer prior to the walk-in cooler, loosely wrapped or lids ajar to promote cooling. Items are hot holding until 135F, ice bathes can be used to rapid cool.
No soap provided at handwash sink. Observed the first hand wash sink in the kitchen lacked soap. The Soap was replaced.
Buildup of food debris/soil residue on equipment door handles. Observed: the cook line handles have an accumulation of debris. Staff started the scrubbing procedure.
Equipment in poor repair. Observed: the center prep table, lower shelf has rust that has compromised the shelf.
Equipment or utensils not designed or constructed in a durable manner. Observed: multiple spatulas that were stained or edges were chipped. Spatulas were moved to a soak pan.
Stored food not covered/protected. Observed: in the walk-in cooler, items on the cooling rack, no overhead protection. A top pan was added to the speed rack.
Worn, torn and/or soiled floors/carpeting. Observed: the floor by the back door has an accumulation of soil/grease. The area has been scrubbed clean.

Food stored on floor. Observed 2 bags of onions on the floor in dry storage. These were moved to a shelf and the kitchen.

Silverware/utensils dried with a towel/cloth. Observed plates being dried with a cloth towel. The manager redirected the employee to allow them to air dry.
