Establishment was unable to provide thermometer/heat strips or test kit to measure temperature of machine. Advised manager not to use machine until gauge was repaired. Manager set up 3 compartment sink ensure all dishes are properly cleaned and sanitized.
Commercially processed reduced oxygen packaged raw tuna bearing a label indicating that it is to remain frozen until time of use no longer frozen and not removed from reduced oxygen package. Chef removed from packaging.
