Time/temperature control for safety food identified in the written procedure as a food held using time as a public health control has no time marking. As per employees, the sushi rice was under time control at 11:00 pm and it is discarded at 3 pm. Employee time marked the rice.
Certified Food Manager or person in charge lacks knowledge of foodborne illnesses and symptoms of illness that would prevent an employee from working with food, clean equipment and utensils, and single-service items. Info was provided.
Employee washed hands in a sink other than an approved handwash sink. Observed employee washing his hands inside 3 compartment sink.
Expired chemical test kit provided when using sanitizer at three-compartment sink/warewashing machine or wiping cloths. Observed chlorine sanitizer expired since 9/23.
Records/documents for required employee training appear to be falsified. Observed all employee trainings were wiped out and wrote with new training date. Owner was advised to get new training certificates for all the employees.
