Raw animal food stored over/not properly separated from ready-to-eat food. Observed cooked chicken stored between raw fish and raw lobster tail at drawers reach in cooler preparation area. Operator relocated the products.
Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed garlic in oil (71 F - Cold Holding) at preparation table next to fryers. As per operator for less than two hours. Operator moved the product to the reach in cooler for rapid cooling.
Wiping cloth solution exceeding the maximum concentration allowed stored in a location that could result in the cross contamination of food, equipment, utensils, linens, single-service, or single-use articles. Observed Bucket (Quaternary + 400 ppm) at preparation table stored next to the salt. Operator added water to get 300 ppm and relocated the sanitizer bucket.
Ready-to-eat, time/temperature control for safety food prepared onsite and held more than 24 hours not properly date marked. Observed rice with milk desert not properly date marked. As per operator from two days ago.
