Observed at steam table fried plantains (112F - Hot Holding); fried chicken (121-140F - Hot Holding). Observed in kitchen, rice and peas (126-149F - Hot Holding). Per operator, items were not has been out of temperature for approximately 30 mins. Inspector suggested that plantains and fried chicken be held on time as a public health control for safety. Form sent to operator and discussed.
