No chemical test kit provided when using sanitizer at three-compartment sink/warewashing machine or wiping cloths.
Bowl or other container with no handle used to dispense food. Observed a soufflé cup with no handle in a container of fruit salad in reach in cooler on the cook line, operator removed the cup.
Dishmachine not washing/rinsing properly. Must wash, rinse and sanitize all dishware, equipment and utensils in three-compartment sink until dishmachine is functioning properly. Observed dish machine is not sanitizing properly at 0ppm, operator will be using 3-compartment sink till it can be serviced.
Ice buildup in reach-in freezer and/or walk-in freezer. Observed ice buildup up around walk in freezer door, operator stated work order is in.
Wiping cloth sanitizing solution stored on the floor. Observed sanitation solution on the floor on the cook line, employee moved.
