What the inspector wrote — 8 findings
Food being cooled by nonapproved method as evidenced by inadequate rate of cooling during time of inspection. On prep table in kitchen, calilou 97F at 3:05pm (cooked cooling 45 minutes) to 93F at 3:25pm; stewed goat 103F at 3:05pm (cooked cooling 1 hr) to 96F at 3:30pm. Based on temperatures and times items will not reach 70F in 2 hrs, Manager moved pans to reach in freezer rapid chill.
