Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Checked the dishmachine four times not sanitizing properly 0ppm chlorine at time of inspection. Spoke with Manager must use 3 compartment sink to wash,rinse and sanitize until dishmachine working properly.RECHECKED Manager prime the dishwasher sanitizer working properly chlorine 50 ppm at the end of inspection.
Commercially processed ready-to-eat, time/temperature control for safety food opened and held more than 24 hours not properly date marked after opening. Observed heavy cream not date marked stored overnight in the reach in cooler.
