Ready-to-eat, time/temperature control for safety food not consumed/sold within 7 days after opening/preparation. See stop sale. Ham, ricotta cheese dated 3.17, 3.18.
Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Sausage in warmer at 117F. Gravy on counter at 83F. Person in charge states has been out for 2.5 hours. Recommend holding on time. Moved to time during inspection, provided time paperwork.
Dead roaches on premises. One dead roach on floor under counter in kitchen.

Prep area lacking adequate sneezeguards or other proper protection from contamination. At front counter, observed cutting boards in use. Exposed to potential contamination from guests.

No measuring device available for measuring utensil surface temperature when using hot water as sanitizer in a dishmachine. Establishment utilizes high temperature dishmachine. No way to test.
No paper towels or mechanical hand drying device provided at handwash sink. No paper towels at hand wash sink. Person in charge provided during inspection.
No plan review submitted and approved - renovations were made or are in progress. Establishment has no way to wash produce that they receive whole and cut on site. Use of cooking equipment producing grease laden vapors/smoke with no hood suppression system installed. Notified Fire AHJ. For reporting purposes only. Establishment has two table top griddles, cook raw hamburgers per person in charge on griddles, no hood system present.
