Time/temperature control for safety food reheated for hot holding not reaching 165 degrees. Advised to turn heat up and rapidly reheat to 165. Curry goat, chicken and rice and beans on steam table temped at 125-130. Unknown how long they have been heating but believes less that 1.5 hours.
