Advised operator to not stored any TCS foods in unit until working properly. Employee moving all TCS foods into walk in cooler.

Slice cheese, shred cheese, boil eggs, raw bacon, milk and deli meats (47-48F - Cold Holding), stored in three door upright reach in cooler in back kitchen area. Unit has torn gaskets and ambient temperature at 49F. Operator said employee has been in and out out unit. Advised operator to not stored any TCS foods in unit until working properly. Employee moving all TCS foods into walk in cooler.
Handwash sink used for purposes other than handwashing. Hand wash sink in kitchen with equipment stored on top. Moved by manager.
