Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Upon inspection, observed single serve butter 75f on kitchen countertop, sliced ham 48f in grill low boy cooler, raw chicken 49f in upright reach-in cooler # 2, shredded cheddar 45f in front counter upright reach-in cooler. All these items less than 4 hours per employee. Also observed raw bacon 49f and sliced pepper jack cheese 47f in grill low boy cooler, raw burger patties 48f in upright reach-in cooler # 2. All these items over 4 hours per employee.

Equipment and utensils not properly air-dried - wet nesting. Observed cups wet nesting in server area. Operator removed cups and stacked to allow air-drying.
Food stored on floor. Observed containers of fried chicken on floor of walk in cooler. Operator corrected storage during inspection.
