Per employee in line less than one hour. Item not covered to maintain heat. 2) In prep area hot box, cooked cabbage (109F - Hot Holding); mac and cheese (88F - Hot Holding). Per employee items in unit approximately 15-30 minutes. All items returned to oven to reheat.
