Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Two turkey breasts sitting on back prep table at 57F and 58F. Operator states removed from walk in cooler approximately 15 minutes prior. Operator moved both to walk in cooler. Also, turkey (46F - Cold Holding); ham (44F - Cold Holding); cheese (45F - Cold Holding); beef (46F - Cold Holding) in front deli case on make line. Operator states door has been constantly open and closed during busy period. Ambient thermometer temperature reading at 44F. Operator called for repair during inspection.
