Stop Sale issued on time/temperature control for safety food due to temperature abuse. Observed provolone cheese, cut provolone, cooked deli ham, prosciuttini, hard salami, cooked deli turkey, cappacoulo, and house made tuna salad at temperatures of 45-51F stored in meat cooler on front line. Person in charge stated all food items were received and placed in walk-in cooler or walk-in freezer. Meat cooler is restocked over time and some food items had been prepped more than 4 hours prior and the rest were stored in same meat cooler over night.

Handwash sink used for purposes other than handwashing. Observed discarded cooked peppers in drain of hand wash sink on front line. Person in charge removed peppers.
Cutting board has cut marks and is no longer cleanable. Observed multiple cutting boards with grooves and no longer smooth and easily cleanable stored above three compartment sink.
Employee personal items stored in or above a food preparation area, food, clean equipment and utensils, or single-service items. Observed employee cell phone and glasses stored on wire rack shelf above prep table in kitchen.
Wet mop not stored in a manner to allow the mop to dry. Observed wet mop stored on ground and unable to air dry near mop sink. Person in charge inverted mop.
