Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Tuna kept on cold case at front counter for less than 4 hrs with temperature of 48F, ham kept on cold case located at front counter for less than 4 hrs with temperature of 51F Provided operator with time control form and explained them that they need to discard the food after 4 hrs.
