At Make top; cut tomatoes (50F - Ambient Cooling 10:20am/52F 10:35am); cut lettuce (50F - Ambient Cooling 10:20am/52F 10:35am). Operator stated cooling for 20 minutes prior, held overfilled in pans, at this rate will not reach 41F within 4 hours. Advised Operator of proper ambient cooling.
