Cooked/heated time/temperature control for safety food not cooled from 135 degrees Fahrenheit to 70 degrees Fahrenheit within 2 hours. In left side beef (96F - Cooling) for exactly 2 hours per operator, and temperature logs. Operator returned to oven, to cook to over 165F and restart cooling.
Vacuum breaker missing at mop sink faucet or on fitting/splitter added to mop sink faucet. 2 way splitter added, missing one vacuum breaker.
Measuring device available for measuring utensil surface temperature when using hot water as sanitizer in a dishmachine does not turn on. Operator states battery stopped working in the morning, no replacement on site.
