Per operator held less than 1 hour. Operator place lid on sauce and closed flip top cook lid. Observed in walk-in cooler pizza sauce (47-51F - Cold Holding) as per operator walk in door was left open while receiving deliveries. Operator placed pizza sauce in reach in freezer for quick chill.
