Displayed food not properly protected from contamination. Croutons and raisins for salad bar out for service not covered for protection. Manager covered both items for protection.
Chemical test kit not used to ensure proper sanitization of equipment and utensils when using a chemical sanitizer. Wrong test strips for chlorine dish machine had quit strips but using chlorine for triple sink and dishwasher.
Handwash sink used for purposes other than handwashing. Hand sink in kitchen area used as dump sink food debris in bottom of sink.

Observed approximately 34 rodent droppings in the following areas; 2 on floor under first booth in dining room, 4 on floor in glass wall dining room, 11 on floor in kitchen under can rack beside ice machine, 7 on floor under oven, 1 on top of a can of pineapples located on dry storage rack, 3 on top of grey dry storage bin, 2 on top of a box of pancake mix on dry storage rack, 4 on floor under fryer.
Food not stored at least 6 inches off of the floor. Observed 1 box of chicken stored on flat baking sheet on floor in walk-in freezer.
In-use tongs stored on equipment door handle between uses. 2 Tongs stored on oven handle.
