Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. sliced provolone cheese (48F - Cold Holding); sliced deli roast beef (47F - Cold Holding) in top of flip top reach-in cooler at sandwich making station. Observed both foods stacked higher than chill line of cooler. Operator removed excessive amount and placed in bottom of reach-in cooler to chill. Also, feta cheese crumbles (47F - Cold Holding); deli turkey meat (47F - Cold Holding); cut lettuce (50F - Cold Holding) in walk-in-cooler. Observed no cold air coming from fan in cooler. Operator stated she has already call to have walk-in-cooler serviced.
