Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Prep line reach in cooler - Cut lettuce (50F - Cold Holding); cut tomatoes (50F - Cold Holding); sliced cheddar cheese (50F - Cold Holding); roast beef (50F - Cold Holding) Lettuce and tomatoes cut at 7 or 8 this morning, nothing ambient cooling. They were having issues with the cooler and had someone out to fix it at 1PM. I set my thermometer inside cooler which read 41F. Several items temped well, and the items temping high were lower toward the bottom of the pan, leading me to believe the issue it with the practice of constantly leaving open the cooler lid. Operator moved these items from prep line to walk in cooler to cool, and closed the reach in cooler lid to allow for proper functioning. Retemped - Cut lettuce (50F - Cold Holding); cut tomatoes (50F - Cold Holding); sliced cheddar cheese (50F - Cold Holding); roast beef (50F - Cold Holding)
