Food being cooled by nonapproved method as evidenced by inadequate rate of cooling during time of inspection. Triple door reach in cooler - sliced tomatoes (62F - Cooling) @ 9:20am ambient cooling since 8:50am recheck 15 mins 62F - held in plastic containers heavily wrapped with plastic wrap - operator moved to freezer to facilitate the cooling process.
