Employee touching ready-to-eat food with their bare hands - food was not being heated as a sole ingredient to 145 degrees F or immediately added to other ingredients to be cooked/heated to the minimum required temperature to allow bare hand contact. Establishment has no approved Alternative Operating Procedure. Upon arrival to establishment observed employee touch hotdog bun with bare hands who,e preparing for service. Discussed bare hand contact with Ready to eat food requirements and proper glove and utensil use with operator. Employee put gloves on.
Wiping cloth sanitizer solution exceeds the maximum concentration allowed. Chlorine sanitizer over 200ppm. Operator corrected to 100ppm.
