Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Dishmachine in kitchen testing at 0ppm. Person in charge will utilize triple sink set up at 400ppm during inspection until serviced. Person in charge able to repair during inspection.
Stop Sale issued due to food not being in a wholesome, sound condition. Observed one pan of ROP salmon with instructions to removed from packaging, thawed in sealed packages in reach in cooler. Liquid egg white in bar opened, person in charge unable to determine when item was opened. See stop sale.

In walk in cooler blue cheese, Brie, shredded cheese, cream cheese, butter, sour cream, Alfredo sauce, feta, buttermilk, whipping cream, yogurt, milk at 48-60F. Observed ambient temperature of unit 50F during inspection. Ambient shell eggs 50F. No one has been in unit today, overnight temperatures. Also, rice in warmer overnight at 127F.
