Green cutting board in use in prep table with black residue staining. Yellow cutting board in clean dish storage area with black food residue staining.
Required employee training expired for some employees. To order approved program food safety material, call DBPR contracted provider: Florida Restaurant and Lodging Association (SafeStaff) 866-372-7233. Two food handling employees with expired food handler training.

Server handled soiled dishes or utensils and then picked up plated food, served food, or prepared a beverage without washing hands. Severs bussing tables in dining room then continued to run food orders to other tables and make drink orders without washing hands between tasks.
Sewage/wastewater backing up through floor drains. Floor drain in middle of cook line and middle of server area backup when hand wash sinks, dish machine, and triple sink are ran. Employee snaked out drains and ran multiple sinks and drains did not back up. Also per management discolored standing water build up in front of dumpsters is from cleaners cleaning out hood vents and waste water draining to dumpster enclosure, employees began to clean up waste water during inspection.
Interior of oven/microwave has accumulation of black substance/grease/food debris. Bottom interior of oven in middle of kitchen has a build up of food debris.

Vacuum breaker missing at mop sink faucet or on fitting/splitter added to mop sink faucet. Outdoor mop sink red hose connected to splitter with no backflow preventer. Operator switched hose to vacuum breaker connection.
Combined ready-to-eat, time/temperature control for safety food held more than 24 hours not date marked according to the date the earliest ready-to-eat time/temperature control for safety ingredient was opened/prepared. In the walk in cooler, Brunswick stew date marked 09/11 per operator meat cooked 09/10. Discussed with operator and corrected the date marking for the container.
Establishment has no written procedures for employees to follow in response to a vomiting or diarrheal event where the vomit or diarrhea is discharged onto surfaces in the establishment. No bodily fluid clean up kit or written procedures available. Inspector provided written procedures.

Operator set up three compartment sink and will utilize for sanitizer step till chlorine can be replaced.
