Raw animal foods not properly separated from each other in holding unit based upon minimum required cooking temperature. Observed raw beef over raw pork in stand up reach-in cooler in kitchen. The manager moved the raw pork above the raw beef.

Wiping cloth sanitizer solution exceeds the maximum concentration allowed. The operator changed out sanitizer bucket to obtain proper strength.
