Operator failed to comply with a Stop Sale Notice. Food for which Stop Sale Notice issued continues to be prepared for service/served to the public. Activated charcoal being used in "Darth Vader" smoothie during inspection, employee made smoothie with activated charcoal and gave to customer after being told not to offer food to customer by inspector while employee was making the smoothie. Employee stated they thought it was ok to serve activated charcoal because they found information that was approved by the USDA.
Raw animal food stored over/not properly separated from ready-to-eat food. Broken raw shell egg along with other raw shell eggs in carton stored over cases of coconut milk in walk in cooler, per employee eggs are for themselves, eggs moved.
Stop Sale issued due to food not being in a wholesome, sound condition. One bag of activated charcoal and one container of smoothie mix with activated charcoal in reach in cooler in establishment being offered in "Darth Vader" smoothie. Also chia seeds in coconut milk (45F - Cold Holding) in bottom of reach in cooler near ice bath bar in kitchen. Per employee no preparation has been done to the item and all other temperatures in cooler at or below 41F and employee does not know why temperature is above 41F.
Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. chia seeds in coconut milk (45F - Cold Holding) in bottom of reach in cooler near ice bath bar in kitchen. Per employee no preparation has been done to the item and all other temperatures in cooler at or below 41F and employee does not know why temperature is above 41F. cut kale (49F - Cold Holding) in bag in reach in cooler by triple sink, per employee bag was taken in and out of cooler for less then 30 minutes prior.
