Wiping cloth solution exceeding the maximum concentration allowed stored in a location that could result in the cross contamination of food, equipment, utensils, linens, single-service, or single-use articles. Observed wiping cloth quaternary sanitizer solution over 400ppm at container. Operator replaced the sanitizer with the appropriate water to sanitizer ratio to correct to 300ppm.
Equipment and utensils not properly air-dried - wet nesting. Observed multiple wet containers stacked to allow no airflow. Operator placed the containers on the side to allow airflow.
