Person in charge stated soup was being cooled to be placed in walk-in cooler since lunch rush was over. Soup was removed from hot holding 1.5 hours prior. Person in charge moved soup to reach in freezer for rapid cooling.
No paper towels or mechanical hand drying device provided at handwash sink. Observed no paper towels at hand wash sink near three compartment sink. Person in charge provided paper towels.
