Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. shredded cheese (55-59F-cold holding) pizza sauce seasoning added( 69F) at pizza station for less than 2 hours. Shredded cheese in plastic container partially submerged in reach in cooler. Operator placed in smaller container and submerged into cooler. Pizza sauce on top of prep table left out of temperature. Reviewed with operator when adding seasoning pizza sauce becomes TCS and needs to be kept at 41F or below. Operator placed both items into refrigerator.
Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. At steam table on cookline: homemade marinara sauce 112F per operator, food out of temperature for less than 2 hours. Operator reheated sauce to 182F.
Time/temperature control for safety pizza identified in the written procedure as a food held using time as a public health control has no time marking and the time removed from temperature was 1 hour ago. Operator timed.
