Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. on ice bath: sliced cabbage (48F - Cold Holding) Per operator, not prepared or portioned today. Per operator, out of temperature for approximately 3 hours. Operator voluntarily elected to discard product.
Clam/mussel/oyster tags not marked with last date served. Oyster tags missing last order sold date. Operator marked tags with proper dates.

Observed tuna in reduced oxygen packaging removed from freezer this morning. Operator removed tuna from packaging.

Food storage container/container lid cracked or broken. Lip edge of ice bucket cracked and broken away. Operator removed ice bucket from circulation.

Operator is not properly tracking/marking the number of days ready-to-eat, time/temperature control for safety food prepared onsite was held at refrigeration temperatures prior to freezing in order to properly date mark the food when it is thawed and held at refrigeration temperatures again. Observed meat sauce at walk in cooler : cooked, cooled and frozen on 10/17. Removed from freezer on 11/3 no date mark.

Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Pizza sauce home made 58°F, sausage 60°F at pizza station. Cook filled up station 3 hours ago and didn't turn in unit. Items were placed in blast chiller and reached 41°F during inspection.
