Employee cracked raw shell eggs and then handled ready-to-eat food and/or clean equipment or utensils without washing hands. Observed operator cracking raw shell eggs then placed cooked eggs in foil wrapper and wrapped fully cooked eggs without hand washing. Educated operator on proper hand washing procedures. Operator washed hands.
Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. home fries (110F - Hot Holding); sausage patties (109F - Hot Holding) Observed in pans on shelf above flat top grill. Per operator, out of temperature for approximately 30 minutes. Operator returned products to flat top grill to reheat to 165+F.
No chemical test kit provided when using sanitizer at three-compartment sink/warewashing machine or wiping cloths. Operator's Quaternary test strips exhibit no color change when testing quaternary sanitizer. Inspector used DBPR issued quaternary test strips to measure concentration.

Food being cooled by nonapproved method as evidenced by inadequate rate of cooling during time of inspection. Flip top cooler: turkey (49F - Cooling) at 8:56; cooling since 8:50 - 50F at 9:21; diced chicken (46F - Cooling) at 8:57; cooling since 8:50 - 46F at 9:21 At current rate of cooling product will not reach 41F within 4 hours. Operator cut portions in half and moved to another cooler.
