Time/temperature control for safety food identified in the written procedure as a food held using time as a public health control has no time marking. Observed cooked farmers cheese vatrushka, cooked chicken bake, cooked chicken pie, cooked cabbage roll, cooked potato roll, and cooked quiche held at room temperature in the bakery display case. The operator stated the foods had been held for approximately 2 hours.

Observed cooked farmers cheese vatrushka, cooked chicken bake, cooked chicken pie, cooked cabbage roll, cooked potato roll, and cooked quiche held at room temperature in the bakery display case. The operator stated the above foods are held under time as public health control and are discarded at 4 hours. The operator was emailed written procedures.

Iced tea dispenser/Soda dispenser not cleaned at least once every 24 hours. Observed in kitchen, non bakery side, soda dispenser with dried on syrup splatter on machine.
Interior of oven/microwave has accumulation of black substance/grease/food debris. Observed inside of microwave, bakery side with dried on food debris on inside top.

Equipment in poor repair. Reach in drawer with oat milk, not cooling properly. Product in use heavily this morning. Operator iced everything down and called in repair.
Stored food not covered. Observed empanadas stored in reach in freezer not covered or protected. Observed employees covering with clear wrap.

Employee washed hands in a sink other than an approved handwash sink. Observed employee washing dishes then hands in triple sink in kitchen, not in hand sink.
Food-contact surface soiled with food debris, mold-like substance or slime. Observed in kitchen side slicer set up and food debris all over it.

Provided time as public health information to operator. Eggs ambient air temperature was 71F. Put into cooler.
Employee personal items stored in or above a food preparation area, food, clean equipment and utensils, or single-service items. Observed employee phone on shelf above prep table in kitchen side.
Employee with no hair restraint while engaging in food preparation. Upon walking in 3employees had no hair restraints on. Employees put on hair restraints with out having to ask.
In-use tongs stored on equipment door handle between uses. Observed two pairs of tongs hanging from oven door on kitchen side.
Opened employee beverage container in a cold holding unit with food to be served to customers. Observed employee drinks in reach in cooler on bakery side not segregated.
Unsealed concrete floor in food preparation, food storage, warewashing area or bathroom. Observed un sealed flooring through out kitchen area.
Utility lines are unnecessarily exposed. Exposed plumbing lines in wall (drywall cut out) in kitchen side net to chest freezer.
